On Thursday (31st October) we are celebrating Halloween here in the UK.
Pumpkins are the main food associated with Halloween and to show how versatile pumpkins can be we have made some creamy Pumpkin Pasta.
We can offer Pumpkin Puree from one of our suppliers based in Spain in either standard, Organic or Baby Food grade. Let us know if you require any further information and we hope you enjoy making this recipe.
Ingredients –
- 2 tbsp Olive Oil
- 1 Onion – finely chopped
- 2 Cloves Garlic – crushed
- 400g Pumpkin Puree
- 2 tbsp Tomato Puree
- 2 tbsp Cream Cheese
- 350g Rigatoni Pasta
- 40g Cheese – any your choice
Method –
- Cook the pasta in a pan of salted water (if unsure follow pack instructions).
- Heat the oil in a frying pan and fry off the onion until nearly cooked then add the garlic. Fry for a further one minute then remove from the heat and allow to cool.
- Check to see if pasta is cooked, once cooked drain the water.
- Put the pumpkin puree into a big mixing bowl and add the cooked onions. Blend using a hand blender until smooth in consistency.
- Put pumpkin and onion sauce into a pan. Add the tomato puree and cream cheese and heat through until hot.
- Add the Pasta to the Pumpkin Sauce and stir until the pasta is coated in the sauce.
- Tip into serving bowl and add your grated cheese to the top and serve.
