A Caper Berry is the fruit that the bush produces once the buds have flowered. The caper berry grows on a wild shrub and grows in dry and sunny climates where the average temperature is from 27°c to 31°c.

The caper berries are picked by hand and put into drums to ferment in a brine solution.

Our Capers are sourced from Morocco in the Fes and Safi regions.
