E.E. & Brian Smith are a supplier of Capers. A Caper is the floral bud of a Caper bush. The caper bush is a wild shrub and grows in dry and sunny climates where the average temperature is from 27°c to 31°c.

The Capers are picked by hand then graded on arrival back into the factory and their stalk is removed. The Capers are put into drums to ferment in a brine solution.

The Capers are manufactured to a specific recipe which is often customer specific. We can supply lots of different recipes however ingredients used normally include – Water, Vinegar, Salt, Sugar, and Aroma.

Once packed into the correct packaging format required the jars are pasteurised.

We can source a wide variety of different caper sizes including –

  • Non Pareille – 5 to 7mm
  • Surfines – 7 to 8mm
  • Capucines – 8 to 9mm
  • Capotes – 9 to 10mm
  • Capotes – 10 to 11mm
  • Fines – 11 to 12mm
  • Fines – 12 to 13mm
  • Gruesas – 13 to 14mm
  • Hors Calibre – +14mm

The smaller the Caper size the more expensive it will be.

Capers can also be supplied milled in vinegar which is often used in Tartare sauce.

We can supply in a range of plastic Food Service and Retail Jars. If the size jar or product isn’t currently produced there would be minimum order quantities of 6,000 cases or 12,000 jars.

Once produced retail and plastic jars have a 3 year shelf life.

Capers have a wide range of applications. Common applications of our Capers include –

  • Pasta Sauces
  • Salads
  • Fish Dishes

Our Capers are sourced from Morocco in the Fes and Safi regions. They are packed and pasteurised into jars in Holland.

The Capers are sourced from BRC (or equivalent) factories. We have been working with these factories for a long time as their agent within the UK.
