A caper is the floral bud of a caper bush. The caper bush is a wild shrub and grows in dry and sunny climates where the average temperature is from 27°c to 31°c.
The capers are picked by hand then graded on arrival back into the factory and their stalk is removed. The capers are put into drums to ferment in a brine solution.
The caper sizes we can supply are: –
